Il est possible de faire germer les graines soi-m\u00eame \u00e0 la maison (\u00e7a ne prend que quelques jours et ne demande pas de mat\u00e9riel co\u00fbteux un germoir ou un bocal et du tulle) ou de les acheter apr\u00e8s germination en barquette dans le commerce (supermarch\u00e9s et boutiques bio).<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">De nombreuses vari\u00e9t\u00e9s se pr\u00eatent \u00e0 la consommation. Notamment : les l\u00e9gumineuses (azukis un petit haricot rouge-, haricots sauf les verts-, fenugrec, alfalfa ou luzerne, lentilles, petits pois, pois chiches, soja, tr\u00e8fle), les c\u00e9r\u00e9ales (avoine, bl\u00e9, \u00e9peautre, ma\u00efs, millet, orge, riz, sarrasin, seigle, kamut\u00ae, quinoa), les ol\u00e9agineux (s\u00e9same, tournesol), les ombellif\u00e8res (carotte, c\u00e9leri branche, c\u00e9leri rave, fenouil), les mucilagineux (cresson, lin), les crucif\u00e8res (moutarde, radis, navet, diff\u00e9rents choux).<\/span><\/p>\n<p style=\"text-align: left;\"><strong><span style=\"text-decoration: underline;\"><span style=\"color: #008000; text-decoration: underline;\">Graines germ\u00e9es<\/span><\/span><\/strong><br \/>\n Avec un bocal en verre ou un gros pot de confiture, une tulle et un \u00e9lastique.<br \/>\n 1 c soupe de graines \u00e0 germer (soit m\u00e9lange tout pr\u00eat du commerce, soit lentilles, tournesol, luzerne, etc\u2026)<br \/>\n Tremper les graines toute la nuit dans le bocal<br \/>\n Le lendemain vider l\u2019eau et retourner le bocal dont l\u2019ouverture est ferm\u00e9e par un tulle et l\u2019\u00e9lastique sur votre \u00e9gouttoir.<br \/>\n Chaque matin remplir le bocal d\u2019eau puis le vider en le laissant sur votre \u00e9gouttoir.<br \/>\n Les graines mettent quelques jours \u00e0 germer. La germination, elle, s&rsquo;effectue \u00abhors sol\u00bb, dans un local ferm\u00e9, \u00abavec de la chaleur et de l&rsquo;eau, voire de la lumi\u00e8re si on veut de la couleur, notamment sur le poireau ou l&rsquo;ail\u00bb. Les graines germ\u00e9es sont pris\u00e9es en restauration, o\u00f9 elles apportent une touche de d\u00e9coration et de fra\u00eecheur dans l&rsquo;assiette. Elles sont aussi r\u00e9put\u00e9es pour leurs qualit\u00e9s nutritionnelles. \u00abCe sont des sources de vitamines et min\u00e9raux, assimilables tr\u00e8s rapidement, parce que c&rsquo;est un produit en d\u00e9but de croissance\u00bb.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">On aura besoin de beaucoup de prudence \u00e0 la manipulation et la propret\u00e9 lors de la germination, toujours travaill\u00e9 dans un endroit propre, bien lav\u00e9 l&rsquo;endroit, les mains et les bocaux, si on <strong>applique des r\u00e8gles d&rsquo;hygi\u00e8ne strictes,<\/strong> il n&rsquo;y a pas de danger, m\u00eame si, comme pour tous les aliments, le risque z\u00e9ro n&rsquo;existe pas.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">Conservez vos graines au frigo, pas plus d&rsquo;un jour pour qu&rsquo;elles ne fermentent pas, et rincez-les \u00e0 l&rsquo;eau vinaigr\u00e9e. <span style=\"text-decoration: underline; color: #339966;\">Il est conseill\u00e9 de ne pas en manger plus de 40g<\/span> (une demi-barquette) <span style=\"text-decoration: underline;\"><span style=\"color: #339966; text-decoration: underline;\">par jour<\/span><\/span>: leur richesse en fibres peut d\u00e9r\u00e9gler le transit.\u00a0\u00c0 condition de garder des menus diversifi\u00e9s et de ne pas les substituer aux fruits et l\u00e9gumes.<\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">Les germes de haricot mungo (appel\u00e9es \u00e0 tort soja) fournissent des prot\u00e9ines v\u00e9g\u00e9tales. <\/span><br \/>\n <span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">Les pousses de lentilles, soja, bl\u00e9, alfalfa (luzerne) sont les plus riches en fer. <\/span><br \/>\n <span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">Celles de radis, lentilles, cresson et soja apportent de la vitamine C. Il en faut 200g pour obtenir le taux de vitamine C d&rsquo;une orange. Vous pouvez associer des pousses de lentilles \u00e0 une soupe de lentilles, ou des graines de radis \u00e0 une salade de chou rouge.<br \/>\n <\/span><\/p>\n<p style=\"text-align: left;\"><span style=\"font-size: 16px; font-family: helvetica,arial,sans-serif;\">La premi\u00e8re pharmacop\u00e9e chinoise (2\u00e8 si\u00e8cle) mentionne le soja germ\u00e9. Leneideh (pain \u00e9gyptien fait de bl\u00e9 germ\u00e9 et cuit, additionn\u00e9 de farine) est vers 1200. Le foul est un plat oriental est compos\u00e9 de grosses f\u00e8ves brunes gonfl\u00e9es par pr\u00e9-germination puis mijot\u00e9es et relev\u00e9es d&rsquo;huile, sel, citron (quelquefois cumin tomates, ail oignon). Les bi\u00e8res de c\u00e9r\u00e9ales sont \u00e9labor\u00e9es \u00e0 partir de grains germ\u00e9s, comme le malt d&rsquo;orge.
